This is not a recipe for brownie purists, but if you want a bit a zing and bitterness to cut through the richness and sweetness of the chocolate then this is an intriguing recipe.
The main problem with this recipe is that the Montezuma Sea Dog. Simon Pattinson, the co-founder of Montezuma describes this wonderful chocolate by saying:
“The beautifully smooth and rich Peruvian chocolate balances perfectly with the juicy lime and subtly interesting sea salt.”
- 250g/8 oz/a brick of (unsalted) butter
- 300g/11 oz/3 bars of Montezuma Sea Dog – or any good quality dark chocolate
- 70g/3 oz/½ cup plain flour
- 1 tsp baking powder
- 50g/2 oz/about ½ cup pecan or walnut pieces (you can just omit these if you are cooking for someone with a nut allergy or dislike)
- 100g/4 oz good quality milk chocolate
- 3 large eggs
- 170g/6 oz/1 cup moist brown sugar
- 170g/6 oz frozen mixed berries
- zest of half a lime
- Preheat the oven to 180°C
- Grease and line with greaseproof paper a baking tray about 5cm deep and 20 cm sq
- Reserve 50g/2 oz (half a bar) of the dark chocolate and melt the rest with the butter in a bain marie (the water shouldn’t touch the top pan or bowl of the bain marie). Take off the heat.
- Break the milk chocolate into squares.
- In a large mixing bowl sift the flour and baking powder. Add the nuts and milk chocolate.
- In another mixing bowl beat the eggs and sugar until a little frothy and then stir in the melted chocolate (which by then should be room temperature or its heat will start to cook the eggs and scramble them) and then the flour mixture. DO NOT try to wash up the chocolate pan – but you are allowed to scrape the sides and have a bit of a lick.
- Finally add the berries, stirring in carefully so as not to break them up too much.
- Bake for thirty minutes, and then check – if a skewer dropped into the middle comes out with still-liquid chocolate mixture they need a bit more baking. But you do not want to get to the stage that it comes out clean – the brownies are supposed to be gooey.
- Meanwhile melt the rest of the dark chocolate.
- When the brownies have cooled a little, and you’ve divided them into squares, put onto a serving dish, pour over the melted chocolate and sprinkle with the lime zest.
