This is the method for making new potato crisps

  1. Heat the oven to 220°C
  2. Allow about three new potatoes per person
  3. Slice the potatoes relatively thinly (½ cm, ¼ inch)
  4. Toss them in olive oil and then season them with smoked salt and freshly ground black pepper
  5. Bake on a non-stick baking sheet (or on silicone paper) for about twenty minutes (keep a watch that they don’t burn)
